Seasonal Menu – May

Our May menu – A special song for the vibrant summer As the earth…

Tempura

Experience the art of traditional Japanese Tempura
A signature creation featured on the esteemed Chef’s Special Omakase menu at ISHIDAYA

What may appear as a simply elegant dish, the Tempura on our Chef’s Special Menu, encapsulates a profound artistry that we are honored to share with you.

The hallmark of exceptional Tempura is the exquisite synergy between the highest quality seasonal ingredients and the delicate, time-honored batter known as Koromo (衣). This ethereal, golden veil delicately embraces the inherent perfection of each carefully chosen element, resulting in a captivatingly light and crispy texture with an explosion of natural flavors. Behind this seemingly understated preparation is a process of meticulous precision. The critical ratio of chilled water, superior flour, and fresh eggs achieves a nuanced mastery that is often unseen but always tasted.

Moreover, the true essence of our Tempura lies within the selection of the freshest seasonal treasures from the ocean’s finest offerings to the most vibrant vegetables, each hand-selected by our head chef. These elements unite to form a quintessential Japanese Tempura, served immediately at our omakase counter, offering an unexpected and elevated gastronomic encounter for the discerning palate.

Table-side preparation of kuzukiri

Concluding your exquisite Omakase journey with the “Mountain Sashimi” – Delicate, silky, and utterly refined

Introducing a traditional Japanese dessert that embodies subtle artistry: Kuzukiri. Often referred to as the “Mountain Sashimi” (山の刺身), it shares a captivating resemblance with its oceanic counterpart in both its mindful presentation and the delicate sensory experience it offers.

Just as the ocean bestows its pristine bounty, Kuzukiri presents a pure and translucent appearance with a melt-in-your-mouth texture – as irresistible as a perfectly prepared piece of Sashimi. Focusing on the inherent flavors, our Head Chef meticulously crafts these crystalline noodles from premium Kuzu powder, allowing their silken smoothness to meld harmoniously with the rich, distinctive sweetness of Kuromitsu house-made syrup.

At ISHIDAYA, the commitment to showcasing the freshest ingredients extends beyond our exquisite seafood. Chef Taka Ishida has curated a special “presentation” of Kuzukiri at the close of your meal, ensuring an engaging and memorable finale to your Omakase experience.

Join us at ISHIDAYA today and indulge in the ethereal delight of the “Mountain Sashimi”.

At ISHIDAYA, we orchestrate a multisensory symphony, where the palate is elevated and the eyes are equally captivated.

Omakase, by its very nature, is an art of refined taste. However, we continuously strive to elevate this experience to its zenith. Each element is meticulously curated; the journey begins with the warm, earthy tones of the wooden tray and chopsticks. Subsequently, exquisitely crafted bowls and plates grace the table, harmonizing with the vibrant hues of each dish to create a resplendent symphony of colors, a living tableau of artistry.

Will you join us today to witness this artistic masterpiece unfold?
